Roasted Veggie Sandwich + Garden Salad Recipe

This meal makes me thoroughly enjoy eating vegetables! Combining all my favorite veggies with some tasty hummus/salad dressing and voila! This is a super quick and easy meal and a great meal for "on the go" style people!




(makes 2 sandwiches)

✘ 1/2 of a bell pepper (cut into chunks)

✘ 1/4 cup red onion (cut into chunks)

✘ 1/2 cup sliced mushrooms

✘ pinch of smoked paprika

✘ pinch of garlic powder

✘ pinch of salt

✘ 1/4 cup shredded carrot

✘ 1 tomato (sliced)

✘ 1/2 an avocado (sliced)

✘ lettuce

✘ hummus (use your favourite oil-free recipe! My favourite is adding my roasted red pepper hummus from my "What I Eat for Life" cookbook to these sandwiches!)

✘ 6 pieces of bread (use GF bread to make this recipe GF)



(make enough to suit you and your needs)

✘ lettuce

✘ tomatoes (in chunks)

✘ sliced cucumber

✘ thinly sliced purple cabbage

✘ sprouts (use your favorite!)

✘ your favorite salad dressing

✘ hemp seeds (my favorite in salads)


1. In a non-stick pan over medium/high heat add bell pepper, red onion, and mushrooms (Add water as needed, so nothing sticks). Then add smoked paprika, garlic powder, and salt. Cook for 7-10 minutes, or until peppers and onions are soft.

2. Toast your slices of bread.

3. Layer: Hummus, lettuce, shredded carrot, avocado, another slice of bread, hummus, roasted veggie mixture, lettuce, tomato, more hummus, and your final slice of bread.

4. Combine all ingredients for the salad, and drizzle dressing over the top. Top with a generous amount of hemp seeds!
