Pulled BBQ JackFruit Tacos with Spicy Mango Salsa & Cashew Lime Sauce
Ingredients:
(Serves 4)
PULLED JACKFRUIT:
Kyle used a packaged and marinated Jackfruit from the brand "Upton Natural" and made these additions:
✘ 2 tbsp maple syrup
✘ 1/4 tsp salt
Alternatively, you can easily make this by using green jackfruit you can find canned in the grocery store, adding BBQ sauce, and pulling apart with a fork! Something like this recipe.
SPICY MANGO SALSA:
✘ 1 medium sized mango (diced)
✘ juice of half a lime
✘ 1/2 a small jalapeno (diced & deseeded)
✘ 1/2 a large red bell pepper (diced)
✘ 1/4 cup diced red onion
✘ salt and pepper to taste
CASHEW LIME SAUCE:
✘ 1/2 cup soaked cashews
✘ 1/2 cup warm water
✘ 1 tsp apple cider vinegar
✘ 1/4 tsp salt
✘ juice of half a lime
Instructions:
PULLED JACKFRUIT:
1. Cook Jackfruit according to directions. Add maple syrup and salt.
MANGO SALSA:
1. Add all ingredients into a bowl, and mix to combine.
CASHEW LIME SAUCE:
1. Add all ingredients into a high-speed blender and blend on high until smooth.

Kyle’s onion chopping skills, however, let’s just take a minute for a round of applause lol! But in all honesty, it does take practice to master chopping an onion. What store did you guys pick the jackfruit up at? Whole foods? The only time I’ve managed to find jackfruit was in China and now I’m in New York so I think that would be difficult, so I’m hoping that this prepackaged one will save the day! I must admit, the texture looks so much like meat it’s crazy. I bet with the salsa the texture is perfect. Oh, and when Kyle asked you what you were doing, and you said getting a nice shot of your cauliflower, well that just made my day lol!
