Vegan Banana Oat Pancakes (Gluten Free & Flourless)

All you need for these pancakes is a blender and a pan! So simple, you don't even need a mixing bowl. Made with super simple wholesome ingredients... you probably already have these ingredients in your pantry! These aren't "fluffy" traditional style pancakes, but they definitely kick the pancake craving in a healthy way!



(makes about 20 small pancakes)

✘ 2 cups rolled oats (you can use quick oats) Use certified GF oats to make this recipe GF

2 ripe bananas

✘ 2 tbsp apple cider vinegar

✘ 2 tbsp agave (or maple syrup)

✘ 1 tsp cinnamon

✘ pinch of salt

✘ 1.5 tsp baking soda (I used baking soda because I couldn't find baking powder. Rookie mistake, I know. Sub for baking powder for a fluffier pancake!)

✘ 2 cups plant milk of your choice


1.5 cups frozen berries (or fresh) of your choice

1 tsp agave

✘ pinch of cinnamon


✘ tahini

✘ agave/maple syrup


1. In a blender add your oats and pulse until a flour texture has formed (if you have a high powered blender, you can probably skip this step).

2. Then add the rest of the pancake batter ingredients and blend until completely smooth. Let the batter to sit for 5-10 minutes. This will allow the oats to absorb some of the liquid. While the batter is resting, heat your pan over medium/low heat.

3. Pour the batter into equal sized circles. Let the pancakes cook for 3-4 minutes on each side (making sure they don't burn).

4. Stack your pancakes, and top as desired!
